Icelandic supermarkets are facing a sudden cucumber shortage after a viral TikTok recipe featuring grated cucumbers, sesame oil, garlic, rice vinegar, and chili oil became wildly popular in the country.
The recipe, shared by Canadian influencer Logan Moffitt, has led to a surge in demand that Icelandic farmers have struggled to meet. The Horticulturists’ Sales Company (SFG) confirmed that the demand for cucumbers has outpaced supply, though they expect the situation to stabilise within a week.
While some supermarket chains and experts attribute the shortage to seasonal factors and the return of schools, the TikTok trend remains a significant contributing factor. The popularity of the recipe has also caused increased sales of other ingredients like sesame oil and spices.
Icelandic farmers produce about six million cucumbers annually.
