Nigerian chef and food influencer Hilda Baci, a former Guinness World Record holder, has attempted to set a new record by cooking the world’s largest pot of jollof rice in Lagos.
Thousands gathered to witness the 23,000-litre custom-made pot filled with 4,000kg of rice, 500 cartons of tomato paste, and 600kg of onions, prepared by a team of 300.
Jollof rice is a classic West African dish of rice simmered in a spiced tomato-based sauce, often served with meat or fish. It’s a staple at celebrations across the region, with each country having its own unique version.
The 28-year-old, who previously cooked for 93 hours straight to earn the marathon cooking record in 2023, said the effort took a year of planning and symbolised Nigeria’s cultural pride. The dish, once verified by Guinness, was shared with the crowd after cooking.
